The "I Have Random Vegetables" Cookeo Chicken Recipe
Alright, let's be real. This isn't a fancy, Michelin-star recipe. It's more of a "wing it and hope for the best" kind of deal. But hey, sometimes those are the best, right? Besides, who has time for fussy recipes during the week?
Ingredients:
- Chicken pieces (I used about 500g of thighs, but breasts work too – whatever you have!)
- 3 medium potatoes, peeled and chopped into chunks
- 1 large carrot, peeled and chopped
- 1 onion, chopped (because everything tastes better with onion!)
- 1 tbsp olive oil
- 1 tsp paprika (smoked is amazing if you have it!)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- About 200ml chicken broth (or water – don't sweat it if you don't have broth)
- Optional: a sprig of thyme or rosemary if you're feeling fancy (I wasn't that day, haha)
Instructions (aka, Throw It All In):

- Turn on your Cookeo and select the "Brown" or "Sauté" function.
- Add the olive oil and brown the chicken pieces on all sides. This is important for getting a little bit of flavor. Don't overcrowd the pot; do it in batches if needed.
- Remove the chicken and set aside.
- Add the onion to the Cookeo and cook until softened, about 3-5 minutes.
- Add the potatoes and carrots and cook for another couple of minutes. (Are you sensing a theme here? Just keep throwing things in!)
- Put the chicken back into the Cookeo on top of the vegetables.
- Sprinkle with paprika, garlic powder, salt, and pepper. Add your herbs if you're feeling adventurous.
- Pour in the chicken broth (or water). Just enough to almost cover the chicken and vegetables.
- Close the lid and select the "Pressure Cook" function. Set the timer for 20 minutes. (This might vary depending on your Cookeo model, so check your manual!)
- Once the timer is up, let the pressure release naturally for about 10 minutes, then manually release any remaining pressure.
- Carefully open the lid (steam is hot!). Check if the chicken is cooked through and the vegetables are tender. If not, cook for another 5-10 minutes.
Serve and Enjoy!
Seriously, that's it! It's ridiculously easy and the Cookeo does all the work. Serve it straight from the pot (less dishes, yay!) and enjoy your delicious, lazy-day chicken and vegetable dinner.

Side note: Don't be afraid to experiment with other vegetables. Mushrooms, peppers, even broccoli would work great in this recipe. And if you're feeling really wild, throw in a can of diced tomatoes! The possibilities are endless!
